Pais Udang (Prawns Or Shrimp Packages)
Ingredients:
1 Kg (2.25 lb) shrimps or prawns
5 kemiri (candlenuts)
1 small pieces of root ginger
1 pieces of fresh, or 1/2 tsp ground, tumeric
A pinch of ground laos (galingale)
3 red or green chillis
A bunch of spring onions or chives
A sprig of sweet basil or mint
1 small lime or lemon
1 salam leaf kor bay-leaf
Salt
Clean and wash the shrimps or prawns. Keep them in a bowl, sprinkled with a litlle salt. Pound the kemiri, ginger, tumeric and laos in a cobek or mortar. Next, seed the chillis and slices them finely. Clean the spring onions and cut them into pieces about 1 cm (1/2″) long. Slice the lime or lemon into thin rounds, discharging the pips. (more…)
