Egg And Bean Pattie

egg bean pattieIngredients:
200 g  minced chicken
2 tomatoes, chopped finely
3 long beans, chopped
1 clove garlic, chopped
5 eggs
1 tsp dried basil
Pepper and salt

Methode:
Marinate the minced chicken with 1/2 teaspoon fish sauce, 1/2 tsp sugar and some pepper. Set aside.
Beat the 5 eggs. Add the basil and pepper. Heat 2 tablespoons of oil in a wok. Brown the garlic and add the long beans, tomatoes and minced chicken. Stir-fry till the chicken is cooked. Add the beaten eggs. Reduce the heat and cook until the meat patties are set.

Telur Dadar Padang (Duck Egg Omelette With Coconut)

3 duck eggs
2 shallots
1 cloves garlic
1 red chilli or 1/2 tsp chilli powder
1 or 2 fresh, or desiccated, coconut
Salt
1 tbs cold water
2 tbs vegetable oil

Peel the shallots and garlic and seed the chilli. Chop them finely, or better still pound them together. Mix them with the coconut and the water, and add a little salt to taste. Then beat the mixture thoroughly with the eggs. It needs more beating than an ordinary plain omelette and should become quite fluffy.
Heat the oil in a wok, and spoon it over the sides ot tilt and turn the wok so that the side are well coated with oil. Pour the omelette mixture into the hot wok, and while it is still liquid, swirl it around so that the omelette is not too thick in the centre. Let it cook for 2 or 3 minutes. Turn it over carefully (it should be perfectly circular) and cook slowly for another 3 or 4 minutes, until the middle, which of course is lightly browned. The edges should now be delicately crisp.
Serve hot or cold, cut up into slices like a cake.

12 hard-boiled eggs
6 shallots
2 cloves garlic
3 red chillis or 2 tsp Sambal Ulek
4 ripe tomatoes
2 tbs dark soya sauce
1 cup boiled water
Salt
1 tbs vegetable oil

Peel and slice the shallots and garlic and seed the chillis. Pound these in a cobek or mortar until smooth. Peel, seed and chop the tomatoes.
Heat the oil in a wok or saucepan and stir-fry the shallots-garlic-chilli paste for a minute or so. Add the chopped tomatoes, soya sauce and water. Let the mixture come to the boil and add the eggs, Whole or halved, and simmer for 8 minutes. Taste, and add salt if necessary. Serve hot, with boiled rice.

Acar Telur (Egg In Piquant Sauce)

acar-telur4 or 6 hard-boiled eggs
3 shallots
2 cloves garlic
4 kemiri (candlenuts)
1 tsp ground ginger
1/2 tsp turmeric
2 or more green chillis
1/2 cucumber
1 tbs clear soya sauce
3 tbs vinegar
2 tsp brown sugar
1 tsp dry mustard
1 cup water
salt
1 tbs vegetable oil

Peel and slice the shallots and garlic and pound them in a mortar with the kemiri until they become a smooth paste. Add the ground ginger and turmeric. Seed the green chillis and chop them finely. Peel the cucumber and slice into thin rounds. Peel the eggs and cut each into four. (more…)
