Kiwifruit, Vanilla Ice-Cream And Brandy Snaps

kiwifruit, vanila ice cream and brandy snapsIngredients:
55 g butter
55 g borwn sugar
55 g golden syrup
55 g flour
1/2 tsp lemon juice (optional)
1 tsp brandy
6 or 12 scoops vanilla ice-cream
2 Zespri GOLD Kiwi fuits, diced
Chocolate shavings

1. Place butter, brown sugar and golden syrup in a pan. Stir and melt mixture over a low fire until dissolved.
2. Remove from heat, sift flour into the mixture and mix well. Add lemon juice if using, and brandy.
3. Put 1 tbsp of the mixture onto an oiled or non-stick baking tray, each spoonful about 12 cm apart.
4. Bake in preheated oven at 160 C for 8 to 10 mins. The brandy snaps ahould be golden brown, thin and lacy.
5. Cool on the tray for about 1 min until they can be removed (without breaking). If snaps harden to fast, heat them again for 30 secs.
6. Shape brandy snaps into baskets by placing them over a glass bowl.
7. To serve, fill with a scoop of ice-cream and top with diced kiwifruits. Garnish with chocolate shavings.
