Citrus Oat Porridge With Grilled Honey Bananas And Yoghurt
Ingredients:
2 cups rolled oats
1 tablespoon wheat bran
4 cups water
1 tablespoon lemon rind, finely grated
1 tablespoon orange rind, finely grated
1/2 cup freshly squeezed orange juice
2 tablespon honey
1/2 teaspoon cinnamon
4 bananas, peeled, sliced
2 cups low-fat yoghurt
Combine rolled oats, wheat bran, water, lemon and orange rind in a saucepan, stir well, cover and cook slowly until mixture begins to boil. Give the mixture a good stir, turn heat down and cook for a further 5 mins or until porridge begins to thicken. Turn off heat, leave the porridge covered and stand for at least 5-10 mins while you prepare the bananas.
Add orange juice, honey and cinnamon to a small pan and bring to the boil. Turn heat down and simmer until the liquid have reduced by half. Remove from heat and add simmer until the bananas, coating them well with the syrupy mixture but not allowing them to soften too much. Remove bananas from the syrup and place under a hot grill to brown.
To serve, top each bowl of porridge with grilled banana, a little of the sauce and some yoghurt.
