Ingredients:
250 ml low-fat soy milk or skim milk, well chilled
1 tablespoon rolled oats
1/2 unpeeled apple, cored, chopped
1/2 banana, peeled, chopped
1 small mandarin or 1/2 orange, peeled, pips removed
4 dried apricots
2 tablespoons chopped almonds
2 teaspoons honey
Pinch nutmeg (optional)
50 g silken tofu (optional, see below)
To make your breakfast smoothie, place all ingredients except nutmeg in a food blender and blend until thick and creamy. Pour smoothie into a glass and add a pinch of nutmeg. For an extra energy boost and protein-rich meal in a hurry, add the silken tofu - it’s sensational.
Ingredients:
110 g caster sugar
750 ml sparkling sweet white wine
1.5 tbsps gelatine
125 ml water
2 tbsps lemon juice
150 g nectarines, sliced
110 g apricots, sliced thinly
110 g plums, sliced thinly
200 g fresh raspberries
1. Combine sugar and 250 ml of the wine in a pan. Stir over a low fire until sugar dissolves. Bring mixture to a boil, reduce heat, then simmer uncovered for 5 mins. remove and set aside.
2. Sprinkle gelatine over water in a heatproof bowl. Stand bowl in a saucepan of simmering water. Stir until the gelatine dissolves.
3. Add gelatine mixture and lemon juice to the wine mixture. Whisk to combine. Stir in remaining wine.
4. Divide fruits among six 250-ml serving glasses. Pour wine mixture over fruits. Cover, refrigerate overnight or until firm.
Ingredients:
2 Zespri GOLD Kiwifruits, peeled
2 mandarin oranges, peeled and seeded
1 tub vanilla yoghurt
Ice cubes
1 tbsp honey (optional)
1. Blend kiwifruits, mandarin oranges, yoghurt and ice in a blender till smooth.
2. Add the honey is you prefer a sweeter smoothie. Serve immediately.
